  • 2 red onions
  • Olive oil
  • Sea salt
  • 5 stems of rosemary
  • Fresh or dried thyme

1. Start by peeling and chopping the onion in rough slices.
2. Sash the herbs including the stem in your hands to break the tiny leaves up, which allows their natural oils and flavours to come out.
Mahalli Tip ! Work with a mix of different tomatoes – big ones should be cut in half, smaller ones can be tossed in right away.
Throw your tomato and herb mixture onto a baking tray and generously season with salt and olive oil.
Bake for 25 minutes on medium settings.
